Veg sushi

Gluten free pizza

Well, recently I found out I am mildly gluten intolerant and so I have been searching around for gluten free alternatives, I can still eat gluten it's just that I should go easy on it. This week I have been trying gluten free all week and I never knew how much gluten I ate! Or just how hard it is not to eat things with gluten. Thank God I am only MILDLY intolerant. Anyway this was a super yummy pizza I made using Bob's Red Mills gluten free pizza dough mix and my oh so better then any I've ever had (I'm not boasting :P) pesto, some tomatoes, "cheese" and little wild mushrooms from a jar.

Vegan caramel cake

I used the recipe for Dulce sin leche cupcakes from Vegan Cupcakes Take Over the World, but made one and a half batch to make this cake and instead of the original way, frosted it and then poured the caramel over it, and also inside it before baking. Wow this was amazing. I made it for my dad's birthday and he totally loved it.

Well I recently got a ton of peaches from my aunt who has a tree in her backyard and through this recipe together basically with no cookbook, which is why it probably could have been better but it was yummy, fresh home grown peaches are always yummy :)

Tofu Benny

Well I don't think this picture does this yummy invention justice, but when I'm hungry and there isn't the greatest light anywhere I just go out in the back yard. This recipe was amazing! I made this, again from my new Vegan Brunch cookbook, and everyone liked it, even my taste bud corrupted brother :P

Tofu omlet and Chelsea waffles

I just bought my new Vegan Brunch cookbook by Isa Moscowitz! And these are my first two recipes from it, and as I expected they are delicious.

I have now forgotten where online I found this recipe but it was in a Google search for vegan muffins. They are very very yummy and moist with a hint of lemon.

Amazing random concoction sandwich

So this evening for dinner I had a random thought pop into my head to make this sandwich, which turned out to be SUPER YUMMY. I am proud of myself. I mean it's no gourmet meal, or fancy healthy dish, it's just my very delicious specialty garlic bread toasted in the oven with tomatoes and then hot fried tofu (my moms specialty) smacked together with butter lettuce in between. I must say that this sandwich is going to make it onto my frequently make list :)

Alfredo vegan style!

Ok so this stuff is gooood. I discovered this recipe on Don't get mad, get vegan! from a google search I was doing because I wanted to see if there was a decent vegan recipe for alfredo sauce. You might want to go over and check out her picture, I think it shows off the sauce better. My dad loves the regular stuff and I wanted to find a better, healthier alternative. And I think I did :) And it goes great with my yummy vegan garlic bread.

Chinese and tamales

Yum. Eggrolls. Though, I never knew why they have that name, they have no eggs in them. And I was thinking about this and I've decided that chinese is my very favorite food. I can eat it until I pop and I NEVER get sick of it like I do other foods. And these vegan tamales I get at the Co-op in Davis are HEAVENLY.

My amazing cousin Lina made this for us for breakfast while I was at her house, it is rice and apples and a cinnamon stick and raisins (which i picked out of mine i don't like raisins) But it was still super delicious.

Blue cheese?

Ok so way back when.....I was a.....Non vegan..I LOVED blue cheese dressing on my salad, actually I basically don't like salad without it. So I haven't really had salad untill...I found this "cheese"!! It tastes, no lie (and I loved the real stuff so trust me on this) exactly like blue cheese JUST like it, it's creepy. But wonderful! I like this even better, it's not real cheese that's well,been, molding. It's made with some sort of seed that I guess tastes just like the stuff. Coconut lime cupcakes

So these little gems were light and tropical and tangy and sweet and moist and chewy and just plain yummy! And aren't they down right adorable? I just wanted to take pictures of them everywhere....Hmmm I feel an idea blooming........Traveling cupcakes.....

Second lava cake

So. My second attempt at lava cakes, and as you can see the lava is more of a pool in the top (not sure how that happened) And they were a bit lighter in both flavor, texture and richness then the first recipe, I didn't like these incredibly much because of it. My mom loved them, but I am going to try again!

Lava cake

Yes I know what your thinking, how could lava cake be vegan?! I thought the same thing, and then I went searching on good ol' Google for recipes and this is the first of three I'm going to try (I'll let you know how the others go) Well, it was good! I know it isn't oozing right out at you in this photo, but that's because I didn't want to eat it piping hot, it was hot enough to melt the Coolwhip though (which is happily vegan! I much prefer it to real cream)

So I know there are quite a few pics here, but I got a bit cupcake happy :P Well these yummy coffee cupcakes have coffee custard piped inside and coffee frosting swirled high on top. No way, I don't love coffee at all! ;P Oh and by the way, these little buddies are decaf! :)
