Tofuti ice cream sandwiches! The best ever, way better then real, and I'm not kidding when I wasn't vegan I still preferred these over "real" ones.

Cupcake heaven!

I just bought this book the other day and can't wait to get started making lovely cupcakes! I don't know about you, but I love cupcakes! And vegan cupcakes are even BETTER. So look forward to some cupcake blogging soon to come :)

Grapes and sausages

These are the Tofuti brand vegan version of kielbasa (polish) sausages and if you haven't tried them, try them! They are super yummy :)

Pumpkin waffle recipe for Lina :)

Here ya go darling :)


2 1/2 cups flour
2 1/2 tsp baking powder
1/2 tsp baking soda
2 tsp cinnamon
1 tsp ground ginger
1/2 tsp ground nutmeg
1/2 tsp ground cloves
2 cups soy milk
1 15 ounce can 100% pure pureed pumpkin
1/3 cup oil
1/3 cup brown or cane sugar
2 tsp vanilla extract


Sift together all the dry ingredients. In separate bowl wisk wet ingredients then add to dry and combine well.

Birthday cake

Today is my brothers 14th birthday so I made him a cake. This is a chocolate, black raspberry cake with vanilla frosting. I have been baking cakes forever and just now mastering the art, I think this one is my best work yet. But still flawed, I had frozen raspberries and didn't think about the fact that they would melt, and run on the cake. But I learned my lesson :) Well my brother didn't want singing or candles so that is why there are no pictures. Oh and this is my brand "new" cake plate complete with dome in a 50's style, I have been wanting one forever and the day I planned to make the cake I decided to go to a thrift store and give it a shot looking for one, and there it was! I got this baby for 8 bucks :) And it looks practically brand new.

My "famous" pumpkin waffles

Well I call these my famous pumpkin waffles because everyone I've made them for likes them, well besides grandma. And this isn't really "My" recipe either, it's from my favorite vegan cook book Vegan with a Vengeance. I had these along with some yummy "sausages" :)

Fig bars

These are a vegan version of Fig Newtons. And they are very tasty indeed!

Raviolis and stuffed zucchini

I found these lovely raviolis at Whole Foods, they have a butternut squash filling and are really yummy. :)

These are zucchinis filled with a bread crumb, almond, garlic, mint and sesame seed pesto. :)

Petas

I love them! You can stuff them with just about anything you come up with. I stuffed mine with a bunch of fresh veggies and a vegan burger.

Slutty cakes

These are called "slutty cakes" I got the recipe from my aunt, and I make them frequently they are so yummy! The center is half peanut butter, half canned pumpkin and you blend them together and drop about a teaspoon of it into the center of the pancakes.Mmmm. :) This is some Silk soy milk, I thought the bubbles from me shaking up the carton looked interesting.

Biscuts and gravy

I make the gravy with canned white beans blended with veggie broth and heated on the stove with mashed up "sausage". And the biscuts are very simple.

Mini portobello burgers

Wow, these were good! I found the recipe in my moms Vegetarian Times magazine. Grilled buns, sauteed onions, grilled portobello mushrooms with BBQ sauce, ....Just a bunch of grilled goodness!

Yellow kiwis

These are so interesting, I found them yesterday and they come from New Zealand. I thought, how neat! Yellow kiwis! And they are sooooo GOOD! They are sweeter then green kiwis and they TASTE yellow! I think I like them better. :) They almost look like bananas don't they? Eww I hate bananas! These are much better then any banana.

Soup

Today for lunch I had this super yummy oriental soup that comes in a little package for only 99cents. I also had crackers with italian "sausage" with sundried tomatoes in them, they are the Tofuti brand.

Fresh fruit and tofu ;)

Yes well despite what many people might say about tofu, it is amazing. And oh so yummy! I always ask my mum to make her scrambled tofu for me for breakfast :) Mmm with fried potatos.
This was AMAZING watermelon, so sweet and juicy mmmm :P
Strawberries, strawberries.

My vegan pesto recipe

1/2 cup pine nuts

1/4 cup nutritional yeast

1/2 cup olive oil (more or less depending)

1 very big bunch fresh basil leaves

4 or 5 cloves garlic

salt and pepper to taste

1. Place pine nuts in skillet over medium heat and toast stirring constantly until lightly toasted.

2.Mix all the ingredients in a food processor, and process until smooth.

Freezes very well. Also for sun dried tomato pesto add about a 1/4 cup sun dried tomatoes.

Pesto pasta and sweet things

I found these cute tiny bowtie pasta and put some of the leftover pesto I made from the pizza on them :) Brownies!

Better then "real" french toast

Really, it is! With home made cinnamon bread, and fresh plums and raspberrys you can't go wrong :) I make the french toast with silken tofu, so a non vegan could never even tell the difference, except that it's better!

Pizza and blondies

Mmmmm vegan pizza! The top two are a pesto, tomato and zucchini pizza, and the bottom ones are mushroom and spinach, and this yummy sauce I got from Trader Joes called Arrabita Sauce. I made these from scratch, including the pesto. Oh and the "cheese" I used is Soya Kaas, it's the best I've found though it has casein in it which is a protein found in milk HERE maybe thats why I like it :/ I suppose that means it's not technically vegan but I don't usually use it. But anyways.....nothing better then some home made pizza I tell ya :) This is a raspberry chocolate chip blondie bar. I shall make more soon they were very yummy!
